4Wrap each dough in plastic wrap and place in the refrigerator while you prepare the filling.
5Slice the cleaned strawberries about 1 cm thick.
6In a large bowl, mix the strawberry slices with the vinegar and mix gently.
7Add the tapioca flour, sugar and salt, and mix gently.
8Set aside to allow the strawberry juices to release.
9Roll the first dough into a circle with a diameter of about 25 cm.
10Transfer the dough to the baking tray and brush with honey or syrup.
11Place half of the filling in the center, leaving a margin of 4 cm.
12Fold the dough over the filling in folds, brush the edges with more honey.
13Sprinkle with coarse sugar if desired.
14Repeat the operation with the second dough and the remaining filling.
15Bake in the hot oven for about 35 minutes until the dough is golden.
16Allow to cool slightly before cutting and serving.
