  2. 2Line the bottom of a springform pan with parchment paper and lightly grease the sides.
  3. 3Peel, core, and quarter the apples, then slice them thinly. In a medium bowl, toss the apple slices with lemon juice and 1 tablespoon of sugar.
  4. 4In a separate bowl, beat the eggs and sugar together until light and frothy, about 3 minutes. Gradually mix in the olive oil.
  5. 5In another bowl, combine the flour, baking powder, cinnamon, and salt. Slowly add this mixture to the egg mixture on low speed.
  6. 6Gently fold the sliced apples into the batter.
  7. 7Pour the batter into the prepared pan and bake for 50 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. 8Let the cake cool in the pan for about 20 minutes before transferring it to a wire rack to cool completely.
  9. 9Dust with icing sugar just before serving.

  • 2 teaspoons icing sugar (for dusting)
