Soft Gluten-Free Anise Cookies

1Heat the oven to 175°C.
2Place baking paper on rimmed baking sheets and set aside.
3In a large bowl, whisk the flour, xanthan gum, cornflour, baking powder, salt and sugar.
4Make a well in the center of the dry ingredients, add the butter, eggs, anise extract and 2 tablespoons of vegetable milk, and mix after each addition.
5The dough should be thick, smooth and soft; Add more vegetable milk as needed.
6Using an ice cream scoop number 50 (about 1 quarter spoons), divide the dough on the molds, at a distance of about 2.5 cm from each other.
7With wet hands, roll each piece into a ball.
8Bake in a preheated oven until the bottom begins to turn golden, about 11 minutes; Do not over bake.
9If the top starts to color, immediately remove from the oven.
10Allow to cool on the molds for about 10 minutes.
11In a small bowl, mix the powdered sugar, the anise extract and 1 tablespoon vegetable milk until a thick paste is formed.
12Adjust the texture with more vegetable milk as needed, until the glaze falls off the spoon slowly.
13Dip the top of each cooled cookie in the glaze, allow the excess to fall off, then return to the pan, coated side up, and sprinkle with colored candies.
14Allow the cookies to set at room temperature.
