1To prepare the empanadas, cut the avocado lengthwise and remove the seeds.
2Remove the avocado flesh to a large bowl, add lemon juice and mash until a smooth texture is obtained, leaving a few small pieces for the texture.
3Mix in the chopped onion, replace it with coriander, tomatoes and salt to taste.
4Place the empanadas on a tray lined with baking paper.
5Place 1-2 tablespoons of filling in the center of each disk, fold in half and seal the edges with your fingers or a fork.
6Brush the upper parts with a beaten egg and bake for about 12-15 minutes until the empanadas are golden.
7Serve immediately with the cilantro sauce.
8For the cilantro sauce, grind cilantro, chalpinio mayonnaise, garlic, lemon juice and cumin in a food processor until the mixture is smooth.
9Season with salt and pepper to taste and set aside.
