Chef tips
For soft, golden potatoes, cut them into small, uniform cubes and sauté lightly before adding the eggs. This ensures they cook through perfectly inside the omelet. For a lighter or kosher-friendly version, swap the chorizo for high-quality beef sausages or sautéed mushrooms. Serve with a fresh salad and toasted rustic bread.
