1Adjust the oven grids to the lower and upper position and heat the oven to 260°C.
2Place 2 baking pans with foil lined edges in the oven.
3In a large pot, cover the potatoes with cold water to a height of 2.5 cm. Add 2 tablespoons of salt and vinegar.
4Bring to a boil over high heat, then reduce to medium heat and cook until soft, about 5 minutes.
5Drain the potatoes and transfer to a large bowl. Add 2 tablespoons of oil, season with pepper and salt, and mix until covered.
6Spread the remaining canola oil on the foil-lined baking sheets, then arrange the potatoes cut side down.
7Bake in the oven until the bottom sides are crispy and golden, about 30 minutes, and switch between the pans in the middle.
8Release the potatoes from the mold and mix. Return to the oven and bake until golden on all sides, about 15 more minutes.
9Add the shallots to the pans and stir to coat them with oil. Bake until they and the potatoes are dark golden, about 10 more minutes.
