Instructions
1Blend the first six ingredients (pinto beans, garlic, chilli pepper, 1/4 tsp salt, 1/4 tsp pepper, onion, and paprika) in a blender or food processor until smashed.
2Taste and adjust seasoning if necessary, then set aside.
3Toast the gluten-free bread in a toaster or oven preheated to 180°C, adding 1 tsp of oil to each slice and toasting for 10 minutes on each side.
4Spread 1-2 tbsp of mashed avocado on each slice of toast.
5Top with 2-3 tbsp of the smashed bean mixture, followed by slices of tomatillo and cherry tomatoes.
6Garnish with coriander, sprinkle with additional spices, salt, and cracked pepper, then drizzle with olive oil.

- 1 avocado
- 1 tomatillo, thinly sliced
- 1/3 cup cherry tomatoes, quartered
- Olive oil for drizzling
- Coriander for garnish
- Additional spices to sprinkle on top (optional), such as chilli powder, red pepper flakes, onion powder, or Mexican seasoning
