1Blend chillies, garlic, vinegar, water, sugar, and salt until smooth, then simmer for 3-5 minutes until syrupy.
2Put fish, curry paste, egg yolk, and sugar into a food processor and blend until firm enough to hold shape and mix until evenly combined.
3Mix in long beans, Thai basil, and kaffir lime leaves just until well combined.
4Heat oil in a frying pan over medium heat. Form patties with wet hands and fry until golden brown, about 2 minutes per side.
5To finish, serve with dipping sauce mixed with cucumber, peanuts, and shallots.

- 1 spur chilli or another mild red chilli pepper
- Thai chillies to taste, optional
- 1/2 cup sugar
- 1/2 tsp salt
- 1/3 cup white vinegar, cane vinegar or rice vinegar
- 3 Tbsp water
- Cucumber slices for serving
- Optional add-ins for the dipping sauce: roasted crushed peanuts, sliced shallots
