Vegan Banana Bread with Caramelized Sugar Crust

1Heat the oven to 175 degrees Celsius.
2Grease and place baking paper in a 900 gram bread pan.
3In a medium bowl, place the flour, baking soda powder, baking soda, cinnamon and salt and mix well.
4In a separate bowl, mix the vegetable yogurt, soy milk, vinegar and vanilla extract until the mixture is smooth.
5Add the brown sugar and oil and mix until the mixture is uniform.
6In a third bowl, mash two of the three bananas until they are smooth, then add to the wet mixture and mix.
7Transfer the wet mixture into the dry mixture and mix until the mixtures come together.
8Pour the mixture into the prepared bread pan.
9Peel the last banana and cut it in half lengthwise, place the two halves on the mixture and gently push in.
10Sprinkle demerara sugar over the mixture and bake for 55 minutes.
11Remove from the oven and let cool to room temperature before slicing and serving.
12For leftovers, cut and grate the banana bread, and serve with vegetable butter, vegetable yogurt or maple syrup.
