Chef tips
For the best texture and to remove excess salt, soak the saltfish in cold water for at least 12 hours, remembering to change the water two or three times during the process. The children will love helping to mash the vegetables for the ‘chop-up’. For a family twist, serve with ripe avocado, fried plantain or crusty bread to mop up the flavours.
